The low carb and high fat way of eating came into my life at just the right time. The struggle with menopause issues had been helped with food and vitamins. As time went by being exhausted increased along with feeling weak. Sometimes I felt like I could barely move my body in any way. I switched my vitamins to whole food vitamins from MegaFood.

In 2017 the mental and physical fatigue was overwhelming. Often I felt like I could barely function. Trying to handle a toddler sometimes was just too much, even though I pushed myself onward. Adding an iron supplement seemed to help. So I decided to have some blood work done. The test results revealed that my iron was fine but my thyroid function was off. The doctor said that I would probably have to start taking the synthetic thyroid medicine. I am like “No Way!”

Research and Discovery

I started researching my symptoms again and discovered adrenal fatigue. With this discovery I stumbled across the low carb/high fat diet as a way to help with the adrenals, the thyroid, and menopause. So in September 2017 I started the Keto Diet. By the first of 2018 I was down 35 pounds and felt so much better. Unfortunately stress entered my life again and as much as I tried to hold on to my success, it slowly went down the drain. I am a stress eater, sweet and salty goodies are my feel good items. Of course this caused weight gain.


Even though I am disappointed with myself, I have not gained all the weight back. I have decided to overcome the stress eating and get back on track. My plan is to renew the process of success with the low carb/high fat way of eating. Plus I will share some of my favorite recipes (like this one) I have discovered.
