This bacon wrapped chicken thighs recipe has become one of mine and my husband’s favorite keto friendly/low carb dinners. Usually we pair it with steamed broccoli florets or riced cauliflower. We do not eat pork so we use turkey bacon. We get our chicken from a local farmer most of the time. Leaving the skin on the chicken thighs adds a little more good fat. Oiled, salted, and peppered these chicken thighs are deliciously moist and a little crunchy!
Oven Baked Bacon Wrapped Chicken Thighs
Ingredients
- 4 thighs chicken boneless with skin
- 4 slices bacon
- 1 tbsp keto friendly oil
- 1 tbsp ghee or butter
Salt and Pepper to taste
Instructions
- Preheat oven to 425F. Oil the baking dish and add salt/pepper, roll the chicken thighs in the oil mixture till coated. Take 1 chicken thigh and wrap 1 piece of bacon around the thigh. Repeat with remaining 3 thighs and pieces of bacon. Place in oiled baking dish. Distribute the ghee or butter on top of the 4 pieces of meat. Place in oven for 45 minutes turning them over half way through the cooking time. Once cooked serve with any side dish you prefer.
